Main Ingredients- 120g Beef Shank (or similar cut), trimmed
- 100ml Rich Coconut Milk
- 3 Tbsp Sweet Lemon Syrup (or lemon preserve)
- 1/2 tsp Soy Sauce
- 2 tsp Cooking Oil
- 1 Tbsp Chili Powder (Gochugaru)
- 1 tsp Salt
- 1 tsp Black Pepper
Ginseng Rendang Sauce (To be blended)- 1 root Fresh Ginseng
- 1/4 Onion
- 1 Dried Red Chili (seeds removed)
- 1/2 tsp Minced Garlic (or 1 clove whole garlic)
- 1 slice Fresh Ginger
- 2 tsp Curry Powder
- 1 tsp Cinnamon Powder
For Serving- 1 bowl Steamed White Rice
- 1 root Fresh Ginseng
- 1/4 Onion
- 1 Dried Red Chili (seeds removed)
- 1/2 tsp Minced Garlic (or 1 clove whole garlic)
- 1 slice Fresh Ginger
- 2 tsp Curry Powder
- 1 tsp Cinnamon Powder
For Serving- 1 bowl Steamed White Rice
Cooking Instructions
Step 1
Remove the stem from the dried chili and shake out the seeds. Soak the chili in warm water for about 10 minutes until softened. This will make it easier to blend smoothly.
Step 2
Season the beef shank evenly with salt and pepper. Let it marinate for about 5 minutes to enhance tenderness and flavor.
Step 3
Combine all sauce ingredients in a blender: the fresh ginseng, soaked dried chili, onion, minced garlic (or whole garlic), ginger slice, curry powder, and cinnamon powder. Blend until smooth and well combined. Ensuring a smooth paste is key for a velvety sauce.

Heat the cooking oil in a pan over medium-high heat. Sear the marinated beef on all sides until lightly browned. This step helps to seal in the juices, keeping the meat tender.

Pour the blended ginseng rendang sauce over the seared beef. Cook over medium-low heat, stirring occasionally, until the fragrant aroma of ginseng and spices is released, about 2-3 minutes. Next, add the coconut milk, soy sauce, and chili powder. Stir well to combine and bring the mixture to a gentle simmer.

Once simmering, stir in the sweet lemon syrup. Reduce the heat to low and let the Rendang simmer gently for 10-15 minutes, or until the sauce has thickened to your desired consistency. This slow simmering allows the flavors to meld beautifully.
