I was contemplating what ingredients pair best with ginseng and thought of ‘Samgyetang’, a summer tonic dish, which led me to create a dish with chicken and ginseng. Wanting to make a fusion dish with chicken and ginseng, ‘Taco’ came to mind, thus ‘Ginseng Chicken Taco’ was born. This unique recipe combines the nourishing properties of ginseng with the popular taco format for a delightful culinary experience.

Main Ingredients

  • 1 Onion
  • 1/2 Red bell pepper
  • 1/2 Yellow bell pepper
  • 1/2 Orange bell pepper
  • 3 Tortillas
  • 20 leaves Baby greens
  • 3 Tomatoes
  • 2 cloves Garlic

Seasoning & Sauce

  • Salt 1 tsp
  • Pepper 0.5 tsp
  • Sesame seeds 4.5 Tbsp
  • Oligosaccharide or Rice syrup 1.5 Tbsp
  • Soy sauce 1.5 Tbsp
  • Vinegar 3 Tbsp
  • Mayonnaise 1.5 Tbsp
  • Olive oil 6 Tbsp (3 Tbsp for dressing, 3 Tbsp for tomato sauce)
  • Sugar 0.5 tsp (for tomato sauce seasoning)
  • Minced garlic 1 Tbsp (for tomato sauce)

Cooking Instructions

1. **Prepare the Ingredients:** First, thoroughly wash the ginseng and remove the root tip (the hard part at the top). Slice it thinly. Cut the chicken breast into bite-sized pieces. Dice the onion and bell peppers (red, yellow, orange) into approximately 0.5cm cubes after removing the seeds and white pith. Dice the tomatoes similarly. Mince the garlic. (Tip: If you find raw onion too strong, soak it in cold water for about 5 minutes and then drain to reduce its pungency. You can also briefly soak the baby greens in cold water to make them crispier.)

2. **Cook and Season the Chicken Breast:** Boil the chicken breast in water for about 5 minutes until tender. Drain the cooked chicken, pat it dry, and lightly season with salt and pepper.

3. **Make the Creamy Sesame Dressing:** Get a blender or immersion blender ready. Combine 4.5 Tbsp sesame seeds, 1.5 Tbsp oligosaccharide or rice syrup, 1.5 Tbsp soy sauce, 3 Tbsp vinegar, 1.5 Tbsp mayonnaise, and 3 Tbsp olive oil. Blend until smooth and creamy. This will create a rich and flavorful sesame dressing.

4. **Prepare the Fresh Tomato Sauce:** Heat 3 Tbsp of olive oil in a pan over low heat. Add 1 Tbsp of minced garlic and sauté until fragrant (garlic oil). Once the garlic turns lightly golden, add the diced tomatoes. Cook over medium heat, stirring occasionally, until the tomatoes break down and the sauce thickens slightly. Season with a pinch of salt, a little sugar, and a tiny bit of pepper to create a fresh tomato sauce.

5. **Grill the Tortillas:** Heat a dry skillet over medium heat. Place one tortilla at a time and grill for about 30-60 seconds per side, until lightly golden and pliable. Be careful not to overcook, as they can become too crispy.
