Thanks to a generous gift of freshly harvested rice, today I’m making a nutritious rice dish with ginseng and sweet chestnuts. This is a wonderfully warming and healthy meal perfect for the start of winter. Enjoy!

  • 2 cups fresh rice (rinsed clean)
  • 35g fresh ginseng (washed clean)
  • 35g chestnuts (shelled)
  • 35g sweet potato (peeled)

First, thoroughly rinse the 2 cups of fresh rice. Prepare 2 cups of water, which is an equal amount to the rice. Place the rinsed rice into a stone pot (or rice cooker) and pour in the prepared water. This helps the water absorb evenly, making the rice more delicious.

Now, let’s prepare the vegetables and chestnuts for the rice. Wash the carrot and sweet potato clean and peel them. Shell the chestnuts. Cut all these ingredients into bite-sized pieces, suitable for enjoying along with the rice grains.

For a more aesthetically pleasing presentation, you can round off the edges of the carrot and sweet potato pieces. This helps them maintain their shape during cooking and makes the dish look more appealing. This step is optional but adds a thoughtful touch.
