Gimbap Jeon Ingredients

  • 1 roll of Gimbap (use leftover or day-old gimbap)
  • 80g Glass noodles (about 1/2 cup)
  • 200g Spam (half a can)
  • 250g Onion (1 medium)
  • 6 Eggs
  • 2 stalks Green onion
  • 2 Red chili peppers
  • 30g Tempura flour (about 1/4 cup)
  • 30g Pancake mix (about 1/4 cup)
  • Cooking oil, as needed

Cooking Instructions

Step 1

Soak the glass noodles in cold water for at least 2 hours until fully softened. If you’re in a hurry, soaking them in hot water will speed up the process. Once softened, drain them thoroughly.

Prepare 1 roll of leftover gimbap. If it has various fillings, it will add more flavor to your Gimbap Jeon.

Finely chop the onion. The finer the chop, the better it will incorporate into the batter.

Cut the gimbap into bite-sized pieces, about 1cm thick. Chop the soaked glass noodles to a similar length. Finely slice the green onions and red chili peppers.

In a large bowl, combine the chopped gimbap, soaked glass noodles, minced onion, sliced green onions, and red chili peppers. Mash the Spam using a glove or a fork until it’s finely broken down, then add it to the bowl. Crack in the 6 eggs. Add 5 tablespoons each of tempura flour and pancake mix. (Tip: Mixing tempura and pancake flour creates an extra crispy and flavorful pancake!)

Mix all the ingredients together thoroughly with a spatula or spoon to form a batter. No extra water is needed, as the moisture from the ingredients and eggs will suffice to create the batter.
