Introducing the ‘Giant Tuna Diet Summer Roll,’ a delicious and satisfying meal perfect for anyone looking for a healthy option. Instead of traditional tortillas, we’re using square rice paper wrappers that are softened in regular filtered water (not hot) and then layered four thick. This creates a large, sturdy wrapper to hold a generous filling of fresh, crisp vegetables, drained tuna for lean protein, and a zesty mustard sauce. This substantial roll is a fulfilling and light meal, perfect for any time of day.
Ingredients- 1 can (100g) tuna, drained of oil
- 1 handful of fresh lettuce
- 1/3 carrot
- 4 Korean green chili peppers (kwari gochu)
- 1-2 Tbsp mustard sauce
- 4-6 sheets of square rice paper wrappers
Cooking Instructions
Step 1
First, prepare the tuna. Place the 100g can of tuna in a sieve and gently press with your hands to drain as much oil as possible. Removing excess oil ensures a clean, non-greasy filling.
Step 2
Next, prepare the vegetables. Wash and select about a handful of fresh lettuce leaves. Thinly julienne 1/3 carrot. Prepare 4 Korean green chili peppers by trimming their stems; you can leave them whole or slice them thinly if you prefer a milder flavor or easier eating.
Step 3
For the rice paper wrappers, have 4 sheets ready, plus 2 extra in case any tear. Instead of hot water, fill a shallow dish with cool filtered water. Briefly dip each rice paper wrapper in the water until it becomes pliable. Be careful not to oversoak, as they can become too fragile and tear easily.
Step 4
Carefully lay the softened rice paper wrappers onto a clean work surface, such as a cutting board or large plate. Overlap them slightly as you lay them down to create one large, cohesive sheet. This layering technique helps reinforce the wrapper and prevent tearing.
Step 5
Begin layering your filling by placing the lettuce leaves first. Lightly pat the lettuce with a paper towel to remove any excess moisture. Excess water can make the rice paper wrapper difficult to seal and prone to breaking.

Arrange the julienned carrots evenly over the lettuce. Then, add the drained tuna in a neat line, followed by the Korean green chili peppers. Avoid overfilling, as this can make the roll difficult to close securely.

Now, add the mustard sauce. Drizzle 1 to 2 tablespoons of mustard sauce over the filling. Its tangy kick will balance the richness of the tuna and add a lovely zest.

To roll, start by folding the bottom edge of the rice paper over the filling. Then, fold in the sides to enclose the filling. Tightly roll the summer roll forward, similar to how you would roll a sushi roll or a burrito. If your wrapper tears, don’t worry! Simply dip an extra rice paper sheet in water, gently spread it over the torn area, and continue rolling.
