Basic Ingredients- 1 whole chicken (approx. 10-ho size young chicken)
- 1 onion (large)
- 1 stalk of green onion (white parts mainly)
- 6-7 cloves of garlic (whole)
- 2 potatoes (medium-sized)

Cooking Instructions
Step 1
Properly preparing the chicken is the first step to a clear and clean Dakgomtang. First, carefully trim any excess fat from the tail and neck areas with a knife. You can also trim the tips of the wings for a neater appearance during cooking. For a more light and clean broth, you can remove the chicken skin. Split the chicken in half and rinse thoroughly under running water to remove any internal organs, blood, or impurities.
Step 2
Place the prepared chicken, along with the onion, green onion, and whole garlic cloves—which will add depth to the broth—into a pot. Add enough water to fully cover the ingredients. Now, turn the heat to high and bring the mixture to a rolling boil, uncovered, to start cooking the chicken.
Step 3
As the chicken begins to boil, it’s important to skim off the foam and impurities that rise to the surface. This step is crucial for achieving a clear and refreshing broth. Use a spoon or ladle to carefully remove all the scum.
Step 4
After skimming off the impurities, cover the pot with a lid and reduce the heat to medium-low. Let it simmer gently for about 50 minutes to allow the chicken to become tender and the broth to develop a rich flavor. If the water reduces too much during simmering, add a little more water as needed.

While the chicken is simmering, prepare the potatoes and green onions for the Dakgomtang. Peel the potatoes and cut them into bite-sized pieces, about 1-1.5 cm thick. Finely chop the green onions. Preparing these ingredients in advance ensures that you can proceed smoothly to the next step once the chicken is cooked, maintaining a clean broth.
Step 6
Remove the chicken and the broth vegetables (onion, green onion, garlic) from the pot after simmering for 50 minutes. Let the chicken cool slightly before handling to prevent the meat from falling apart. The broth vegetables have already infused their flavor and aroma, so they can be discarded.
Step 7
Once the chicken has cooled down, separate the meat from the bones. Then, shred the chicken meat into small, bite-sized pieces. It’s best to shred it finely so that it’s easy for babies and children to eat. These shredded pieces will add a delightful texture and savory taste when added back to the soup.
Step 8
Add the prepared potatoes, shredded chicken meat, and chopped green onions to the well-simmered chicken broth. Continue to cook until the potatoes are tender.
