Main Ingredients

  • 1 pack silken tofu (soft type)
  • 100g beef (minced or thinly sliced for stir-fry)
  • 1 handful of daikon radish
  • 1/4 zucchini
  • 1 type of mushroom (e.g., shiitake, oyster)
  • 1 egg
  • 1 Tbsp sesame oil
  • 1 Tbsp soy sauce for soup (recommend low-sodium baby soy sauce)
  • 1 Tbsp cooking wine (or mirin) for removing beef odor

Cooking Instructions

Step 1

First, thoroughly wash and prepare all the vegetables. Slice the daikon radish thinly and flatly, and cut the zucchini into similar thicknesses. Trim the stems from the mushrooms and slice them. (Tip: If you have onion or green onion at home, thinly slicing and adding them will make the soup broth even sweeter and more refreshing!)

You can use beef that has been frozen. About an hour before cooking, place the beef in its packaging in cold water to thaw it to a consistency that’s easy to cut. Slice it into small, thin pieces that a 3-4 year old child can easily put in their mouth. (Using minced beef will make this even easier.)

Heat 1 tablespoon of sesame oil in a pot and add the beef. Stir-fry until the exterior of the beef is cooked. At this stage, add 1 tablespoon of cooking wine to effectively remove any gamey smell from the beef.

Using a spoon or spatula, continue to stir and cook the beef. Stir until the beef releases its juices and the outer surfaces turn a nice golden brown.

Once the beef is partially cooked, add the prepared daikon radish, zucchini, and mushrooms to the pot and stir-fry together. Especially when you sauté until the daikon radish becomes translucent, its natural sweetness will seep into the beef, adding a deep flavor to the broth later. It’s like making a delicious stock!

When the daikon radish starts to look transparent, pour enough water into the pot to cover more than half of the ingredients. Bring to a boil over high heat, then reduce to medium heat.

While the soup is simmering, beat 1 egg in a separate bowl. Once the broth is well-infused, carefully add the silken tofu to the pot. Gently pour the beaten egg in a swirling motion over the soup. As the egg begins to set, season with 1 tablespoon of soy sauce for soup. Turn off the heat once the egg is fully cooked. (Tip: If your child prefers a richer broth or you want a thicker stew-like consistency, you can continue to simmer over medium heat until the liquid reduces slightly.)
