Generous Parsley Aglio e Olio – The ‘Chef’ Movie Style
The iconic pasta featured in the movie and Netflix’s ! A Parsley-Loaded Aglio e Olio bursting with flavor.
Hello everyone, and welcome to Dishd! Today, we’re recreating the incredible pasta that made an appearance in the movie
Ingredients- 15 cloves of garlic, thinly sliced
- 1 bunch of fresh parsley (about 2 generous handfuls)
- 3-4 dried red chili peppers (peperoncino), adjust to taste
- 1 knob of butter (approx. 10-15g)
- Juice of 1/2 lemon
- Salt, to taste
- Black pepper, to taste
- Spaghetti, 2 servings
Cooking Instructions
Step 1
The foundation of any great pasta is its cooking water! Before you start prepping ingredients, fill a deep pot with plenty of water, add a generous amount of salt, and bring it to a rolling boil. (This salted water is essential for flavoring the pasta from within.)
Step 2
For this Aglio e Olio, we’re going a bit extra. Thinly slice all 15 cloves of garlic. The thinner the slices, the more flavor they’ll infuse into the olive oil.
Step 3
Take your fresh parsley and remove the tough stems. We only want to use the tender leaves.
Step 4
Finely chop the parsley leaves. Aim for a texture where the leaves are chopped but still have some slight texture, rather than turning into a paste. This will enhance the mouthfeel.
Step 5
Cut a lemon in half; you’ll be using the juice from about half of it. This will add a bright, fresh finish to the pasta.
Step 6
For a touch of heat, prepare your peperoncino. I used about 3-4, but feel free to adjust. Remove the seeds if you prefer less spice, and finely chop them.
Step 7

Step 8
Now, pour a generous amount of extra virgin olive oil into your pan. The quality and quantity of olive oil are key to the authentic flavor of this dish.
Step 9
Add the sliced garlic to the pan and gently sauté over low heat. It’s crucial to cook the garlic slowly without burning it, allowing its fragrant aroma to infuse into the oil.
Step 10
Once the garlic begins to release its fragrance, add the chopped peperoncino. Sauté them together, allowing the spicy aroma to meld with the garlic-infused oil.
Step 11
At this stage, season lightly with salt and pepper. Remember, you’ll be adjusting the seasoning further after adding the pasta, so keep it mild for now.
Step 12
Check if the garlic is golden brown and easily pierced with a fork. Now, add all the chopped parsley and sauté briefly to release its fresh aroma.
Step 13
It’s time to add the cooked spaghetti directly into the pan with the garlic and oil mixture. No need to meticulously measure pasta water at this point; just add the pasta straight in.
Step 14
Add about one and a half ladles of the starchy pasta water to the pan. This water, rich with starch, will help emulsify the oil and create a light sauce.
Step 15
Toss everything together over medium heat, allowing the pasta to absorb the flavorful sauce. Keep tossing until the pasta looks glossy and well-coated.
Step 16
Once the pasta is nicely sauced, squeeze in the fresh lemon juice. A handy tip is to hold back the seeds with your fingers as you squeeze.
Step 17
Finally, add the knob of butter and stir until it melts and creates a beautiful, glossy finish. The butter adds richness and a lovely smoothness.
Step 18
While optional, grating some Parmesan cheese over the top at the end will add another layer of delicious flavor. Feel free to add it to your preference.
