My husband requested it, so I packed this ham and cheese sandwich for his lunch! It’s bursting with freshness, incredibly satisfying, and makes for a perfect, hearty meal. I’ve loaded it with crisp vegetables, juicy tomatoes, and even some crispy shrimp cutlets, all generously spread with a zesty mustard spread.

Ingredients

  • 4 slices of bread
  • Plenty of lettuce
  • A handful of chicory greens
  • 1 tomato
  • 2 eggs
  • 4 slices of ham
  • 2 slices of cheese
  • 1/2 cucumber
  • 1 Tbsp whole grain mustard
  • 2 Tbsp mayonnaise
  • 1.5 Tbsp honey mustard
  • 1 Tbsp agave syrup (or corn syrup)

First, let’s prepare the fresh vegetables. Slice the tomato and cucumber thinly, about 0.5 cm thick. Thinly slice the onion as well. If you find raw onion too strong, you can soak the slices in cold water for about 10 minutes, then drain them to reduce the sharpness.

Tear the lettuce into large, bite-sized pieces and cut the chicory greens into 2-3 cm lengths. Then, prepare fried eggs according to your preference – you can have a runny yolk or a fully cooked one.

If you have shrimp cutlets, crisp them up in an air fryer for about 10 minutes at 180°C (350°F). If using an oven, bake them at 180°C (350°F) for 12-15 minutes until golden brown and crispy.
