Main Ingredients

  • 2 salted mackerel fillets, prepared
  • 16 cloves garlic, whole or sliced
  • Small piece of radish (about 100g)

Braising Sauce

  • 400ml water
  • 2 Tbsp chili powder
  • 3 Tbsp fish sauce (or soy sauce)
  • 1 Tbsp rice wine (or mirin)
  • 1 Tbsp soju (or mirin)
  • 1/2 green onion, chopped

Cooking Instructions

Step 1

Begin by preparing two salted mackerel fillets. Rinse them gently under cold running water and pat them dry to help reduce any fishy odors during cooking.

Step 2

Next, prepare the garlic and radish, which will add flavor to the braise. You can use whole garlic cloves or slice them thinly. Slice the radish into bite-sized pieces, about 0.5 cm thick. Having these ingredients prepped will make the cooking process much smoother.

Step 3

In a wide pot or wok, combine all the ingredients for the braising sauce. Mix 400ml of water, 2 Tbsp chili powder, 3 Tbsp fish sauce (or soy sauce), 1 Tbsp rice wine (or mirin), and 1 Tbsp soju (or mirin). Stir well until the chili powder is dissolved. Preparing the sauce in advance ensures the flavors meld beautifully.

Step 4

Arrange the sliced radish at the bottom of the pot, followed by the mackerel fillets. Tuck the prepared garlic cloves around and between the mackerel and radish. Pour the prepared braising sauce over everything, ensuring the ingredients are mostly submerged. Bring the mixture to a boil over high heat, then reduce the heat to medium-low, cover the pot, and let it simmer for about 15-20 minutes, or until the fish and radish are tender. Basting the fish with the sauce occasionally will help the flavors penetrate deeply.

Step 5

Once the mackerel and radish are tender and the sauce has reduced to a glaze, stir in the chopped green onions and simmer for another minute.
