Main Ingredients- 5 King Jumbo Shrimp (or cocktail shrimp)
- 5 cloves garlic
- 1/4 red bell pepper
- 1/3 onion
- 1 piece carrot (about 2cm)
- A pinch of parsley flakes
- 2 Tbsp cooking oil
- 1 bowl cooked rice
Seasonings- 2/3 Tbsp oyster sauce
- 1/3 tsp bamboo salt (optional)

Cooking Instructions
Step 1
Start by preparing your shrimp. If using frozen shrimp, rinse them under cold water and pat them thoroughly dry. This step is crucial to prevent excess moisture from making your fried rice soggy.
Step 2
Prepare the shrimp based on their size. Since we’re using King Jumbo Shrimp, which are quite large, I’ve halved them and then cut each half into three pieces. If you’re using smaller cocktail shrimp, you can leave them whole. Fresh, plump shrimp will add a wonderful texture to your fried rice.
Step 3
Finely dice all your vegetables for the fried rice. This includes the red bell pepper, carrot, and onion. Finely dicing ensures they cook evenly and blend well into the rice, making it more appealing, especially for picky eaters.
Step 4
Prepare the garlic to add a rich aroma. Thinly slice the garlic cloves and soak them in water for about 5 minutes. This process helps to mellow out the strong garlic flavor slightly and ensures they become wonderfully crispy when fried.
Step 5
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the thinly sliced garlic and fry until golden brown and fragrant. Be careful not to burn them. Once fried to perfection, transfer the garlic chips to a paper towel-lined plate to absorb excess oil. These crispy garlic chips will be a delicious topping.
Step 6
In the same pan used for frying garlic (add a little more oil if needed), sauté the diced onion until it becomes translucent. Once the onion is softened, add the prepared shrimp and cook until they turn pink and are fully cooked through.

When the shrimp are nicely pink, add the diced carrots and red bell pepper to the pan. Stir-fry for a minute or two until they are slightly tender-crisp. Now, add the oyster sauce (2/3 Tbsp). Be mindful not to add too much oyster sauce initially, as the shrimp already provide some saltiness. Stir everything together to coat the ingredients evenly.
Step 8
Add the cooked rice to the pan. Break up any clumps with your spatula and stir-fry until the rice is well combined with the other ingredients and heated through. Taste the fried rice and adjust the seasoning if necessary by adding the bamboo salt (1/3 tsp) for a subtle salty flavor. Finish with a sprinkle of black pepper for an extra layer of aroma.
Step 9
