Garlic scapes, the flower stems of garlic, absorb all the beneficial nutrients from the garlic bulb, containing over 70% of its health benefits! They are even richer in beta-carotene, an antioxidant, than garlic itself. Garlic scapes offer a wonderful texture without the strong garlic odor, making them versatile for various dishes. Today, I’ve made a unique Soboro rice bowl using these nutritious scapes. Get ready for a bowl that will have you cleaning your plate!
Main Ingredients- 25g Garlic Scapes
- 120g Pork (thinly sliced for bulgogi, or ground pork)
Seasoning- 1 tsp Grated Ginger or Ginger Powder
- 1 tsp Sugar
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Doenjang (soybean paste – store-bought recommended)
- 1 Tbsp Mirin (Rice Wine)
- 1 Tbsp Honey
- 2/3 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper (optional)
- 1 tsp Grated Ginger or Ginger Powder
- 1 tsp Sugar
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Doenjang (soybean paste – store-bought recommended)
- 1 Tbsp Mirin (Rice Wine)
- 1 Tbsp Honey
- 2/3 Tbsp Minced Garlic
- 1 Tbsp Sesame Oil
- Pinch of Black Pepper (optional)
Cooking Instructions
Step 1
First, prepare the garlic scapes and pork for the dish. You can use ground pork, but I opted for thinly sliced bulgogi-style pork, which I then chopped finely. I prefer this method as it allows me to see the quality of the meat more clearly than with pre-ground meat. Feel free to choose whichever you prefer!
Step 2
Add 1 tsp of grated ginger (or ginger powder) and 1 tsp of sugar to the finely chopped pork. Mix well by massaging the ingredients into the meat. Let it marinate for about 10 minutes to tenderize the pork and allow the initial seasoning to penetrate.
Step 3
To the pork marinated with ginger and sugar, add 1 Tbsp of soy sauce, 1 Tbsp of mirin, 1 Tbsp of honey, and a pinch of black pepper. Mix again by gently massaging to ensure the seasonings are evenly distributed.

Now, for the secret ingredient that adds depth to this dish: add 1/2 Tbsp of doenjang (soybean paste). If your homemade doenjang is very salty, I recommend using a store-bought variety. Finally, add 2/3 Tbsp of minced garlic and 1 Tbsp of sesame oil, and mix everything together thoroughly until well combined.

While you can cook the seasoned pork immediately, letting it rest and marinate for an additional 20 to 30 minutes in the refrigerator will allow the flavors to meld further, resulting in a richer taste. Cover with plastic wrap before refrigerating.

Wash the garlic scapes thoroughly and then chop them into bite-sized pieces. Keeping them slightly crisp is key to the dish’s texture!

Heat a pan over high heat and add the marinated and rested pork. Stir-fry the pork, ensuring it cooks evenly and the liquid released evaporates, leaving the meat looking dry and ‘fluffy.’ This high-heat cooking method helps to remove any gaminess and enhance the flavor.

Once the pork is cooked and appears fluffy with no excess liquid, add the chopped garlic scapes to the pan. Stir-fry them together for about 1 to 2 minutes. Avoid overcooking the garlic scapes, as they can become mushy; you want to retain their pleasant crispness.
