Easy and Delicious Stir-Fried Garlic Scapes Recipe
Garlic scapes, also known as ‘garlic stems’ or ‘garlic shoots,’ are the edible flower stalks of mature garlic plants. They offer a characteristic garlicky pungency but are less pungent than garlic cloves, making them versatile for dishes like stir-fries and simmered sides where you can enjoy a larger quantity. They retain about 70% of garlic’s health benefits and are richer in beta-carotene, an antioxidant, than garlic itself. Ingredients- 150g garlic scapes
- 200ml water
- 100ml soy sauce
- 100g oligodang (corn syrup or other liquid sweetener)
- 2 Tbsp cooking oil
Cooking Instructions
Step 1
First, prepare 150g of fresh garlic scapes. Wash them thoroughly under running water and then cut them into manageable pieces, about 3-4 cm long. Cutting them to this size ensures they are easy to eat and won’t break apart too much during cooking.
Step 2
Place the prepared garlic scapes into a pot. You can arrange them neatly or layer them slightly. Putting them in the pot like this makes it convenient to cook them evenly with the sauce.
Step 3
Now, let’s make the delicious simmering sauce. Add 200ml of water, 100ml of savory soy sauce, 100g of oligodang for sweetness and glaze, and 2 tablespoons of cooking oil to the pot. Stir everything together well. Bring the mixture to a boil over medium heat, then reduce to low heat and let it simmer gently until the garlic scapes are tender and the sauce has thickened to a syrupy consistency. Stir the garlic scapes occasionally to ensure they are evenly coated with the sauce.
