Main Ingredients- 1 bowl of small anchovies (approx. 100g)
- 1 bowl of prepared garlic scapes (approx. 150g)
- 3 Tbsp soy sauce
- 2 Tbsp white sugar
- 2 Tbsp corn syrup (oligosaccharide)
- 5 Tbsp cooking oil
- 1 handful of thoroughly washed scallion roots (approx. 5-7 roots)
Cooking Instructions
Step 1
First, remove the guts from the small anchovies. Place them in a dry pan and stir-fry over low heat for 2-3 minutes to remove any fishy smell and enhance their nutty flavor. Once stir-fried, let the anchovies cool slightly in a sieve, discarding any crumbs, and set aside.
Step 2
Heat 5 tablespoons of cooking oil generously in a pan. Add the washed and dried scallion roots and stir-fry over medium-low heat for 2-3 minutes. The key is to allow the subtle, deep aroma of the scallion roots to infuse into the oil. Be careful not to burn the scallion roots. Once the aroma is sufficiently released, remove the scallion roots, and use the infused oil for the next step.
Step 3
Wash the garlic scapes thoroughly under running water. Trim off the tough bottom ends. Cut the scapes into manageable 5cm lengths, focusing on the natural segments. Ensuring an even cut will help them cook uniformly.
Step 4
To the pan with the scallion-infused oil, add 3 tablespoons of soy sauce, 2 tablespoons of white sugar, and 2 tablespoons of corn syrup. Bring the mixture to a boil over medium heat. Once the sauce begins to bubble, add the cut garlic scapes. Stir-fry over medium heat for about 2-3 minutes, until the garlic scapes are about 2/3 cooked and slightly tender. Be mindful not to overcook them, as this will diminish their crisp texture. Then, reduce the heat to medium-low.
Step 5
Add the pre-stir-fried small anchovies to the pan. Gently mix them with the garlic scapes and sauce using a spatula, ensuring everything is evenly coated. Continue to stir-fry for another 1-2 minutes, being careful to prevent the anchovies from burning or clumping. This will result in a deliciously crisp garlic scape and anchovy stir-fry! For an extra touch of flavor and aroma, you can stir in 1 teaspoon of sesame oil and a sprinkle of toasted sesame seeds at the very end, according to your preference.
