Hearty and Delicious! Easy Garlic Soy Braised Dish, Similar to Potatoes
As summer ripens, the vegetables planted in the garden are slowly growing. Many of my close friends are gardening enthusiasts, and one has already shared a picture of their first harvest, ready for a delicious meal with meat and wraps. On a late-setting summer evening in Toronto, I also went out to the garden and picked a few tender leaves, marking the start of my own harvest. While it might seem more economical to buy vegetables considering the cost of seedlings or seeds sent by friends, there’s an undeniable charm in picking fresh greens yourself.
Since it’s summer, I went to the market to buy two burdock roots to make burdock rice rolls for my daughter before she heads to work. I prepared the usual marinade for two burdock roots, but today’s burdock was surprisingly thin, leaving half the marinade unused. I happened to notice some peeled garlic cloves soaking in water, which I found bothersome to peel myself. Quickly selecting the slimmer garlic bulbs, I decided to braise them in the leftover marinade. The result? My son, who loves garlic, and my daughter, who was skeptical about the spiciness, were both delighted and polished off the entire plate! They even commented that it tasted like potatoes. This simple yet flavorful braised garlic dish is a must-try!
Ingredients- 200g peeled garlic (rinsed and soaked in water)
- 2 Tbsp soy sauce
- 3 Tbsp water
- 1 Tbsp sugar
- 1 tsp mirin (sweet rice wine)
- 0.7 tsp grapeseed oil
- 1/2 tsp corn syrup or oligosaccharide
Cooking Instructions
Step 1
First, rinse the garlic cloves thoroughly under running water. Trim off the tough root ends and any stems for a clean presentation. This preparation helps the marinade penetrate better and makes the garlic more pleasant to eat.
Step 2
Now, let’s prepare the braising sauce. In a bowl, combine 2 tablespoons of soy sauce, 3 tablespoons of water, 1 tablespoon of sugar, 1 teaspoon of mirin, 0.7 teaspoon of grapeseed oil, and 1/2 teaspoon of corn syrup (or oligosaccharide). Stir well until the sugar is completely dissolved. You can adjust the amount of corn syrup to your preference.
Step 3
Pour the prepared sauce into a pot or a deep pan and bring it to a boil over medium heat. Once the sauce begins to simmer, reduce the heat slightly.
Step 4
When the sauce is bubbling, add the prepared garlic cloves. Continue to cook over medium heat, allowing the garlic to braise and the sauce to reduce. Be mindful to prevent the garlic from burning.
Step 5
Gently stir the garlic occasionally as it braises to ensure even cooking and prevent sticking to the bottom of the pan. Keep a close eye on it throughout the process. Braise for about 15-20 minutes, or until the sauce has thickened and coated the garlic beautifully.
Step 6
Finally, when the sauce has reduced to a glaze and the garlic is glossy, turn off the heat. For an extra touch of flavor and texture, sprinkle some toasted sesame seeds on top before serving. Enjoy this delicious and savory braised garlic with your favorite rice!
