Garlic & Olive Oil Style Potato Stir-Fry: Your Side Dish, My Main Meal
A flavorful stir-fry of thinly sliced potatoes cooked generously with olive oil and garlic. It’s a fantastic side dish and can also be enjoyed as a light meal instead of rice.
Ingredients- 2-3 medium potatoes
- 1 medium carrot
- 1 Tbsp minced garlic
- 3-4 cloves garlic, sliced
- 2 Tbsp olive oil (for stir-frying)
- Pinch of salt
- Pinch of black pepper
- Pinch of dried parsley (for garnish)
Cooking Instructions
Step 1
First, wash and peel the potatoes and carrot. Using a knife or a mandoline slicer, cut them into very thin julienne strips. Thinly slice or mince the garlic cloves to release maximum flavor.
Step 2
Place the julienned potatoes in a bowl of cold water and let them soak for about 10 minutes to remove excess starch. This step ensures the potatoes won’t clump together when stir-fried, resulting in a fluffier texture. Alternatively, you can briefly blanch the potato strips in boiling water for 30 seconds to 1 minute, then drain them well before cooking for a softer texture (this step is optional).
Step 3
Heat a generous amount of olive oil in a wide pan over low heat. Add the minced garlic and sliced garlic cloves. Gently sauté the garlic until it becomes fragrant and golden, being careful not to burn it. This process infuses the oil with a delicious garlic aroma, which is key to this dish.
Step 4
Once the garlic is fragrant, add the drained potato strips and julienned carrot to the pan. Increase the heat to medium and begin to stir-fry. Continue cooking until the potatoes become tender and slightly translucent, and the carrots are cooked through but still have a slight bite.
Step 5
When the potatoes and carrots are almost fully cooked, season the stir-fry with salt and black pepper to taste. You can also sprinkle in some sesame seeds for an extra nutty flavor, if desired.
Step 6
Once everything is well combined and cooked to perfection, turn off the heat. Drizzle a little more olive oil over the stir-fry for added sheen and flavor.
