Main Ingredients- 100g small dried anchovies (for stir-frying)

Seasoning- 2 Tbsp soy sauce
- 2 Tbsp plum extract (maesil cheong)
- 5 Tbsp corn syrup (or rice syrup)

- 3 Tbsp water

Cooking Instructions
Step 1
First, prepare the small dried anchovies for stir-frying. Peel the whole garlic cloves and slice them into roughly thirds. Have the almonds ready. Prepping the ingredients like this beforehand will make the cooking process much smoother.
Step 2
Heat 5 tablespoons of olive oil in a frying pan over medium heat. Add the prepared anchovies and stir-fry, stirring occasionally to prevent burning, until they turn a nice brown color. Stir-frying the anchovies thoroughly until golden brown will remove any fishy smell and enhance their nutty flavor.

Once the anchovies are nicely browned, add the almonds and sliced garlic to the pan and stir-fry together. Continue to stir-fry until the garlic starts to soften and releases its fragrant aroma. It’s important to manage the heat well during this stage.

Step 5
Once all ingredients are well combined and coated with the sauce, turn off the heat. While the pan is still warm, add 2 tablespoons of mayonnaise and mix thoroughly. Adding mayonnaise at the end further enhances the savory taste of the stir-fried anchovies and adds a smoother texture, making it even more delicious.
