Main Ingredients

  • 1 bag of Gamtay (seaweed, approx. 100g)
  • 2 Cheongyang peppers (spicy green chili peppers)
  • 1 red chili pepper
  • 5-6 stalks of garlic chives

Seasoning for Clean & Cool Flavor

  • 2 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp soup soy sauce
  • 2/3 Tbsp crushed toasted sesame seeds
  • 100ml water

Seasoning for Tangy & Spicy Flavor

  • 280g aged kimchi
  • 1 cup kimchi brine
  • 1/2 Tbsp fish sauce (anchovy or sand lance)
  • 1 Tbsp crushed toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the Gamtay. Most commercially sold Gamtay is already cleaned and trimmed, so you can use it directly without further preparation, which is very convenient.

Remove the stems from the Cheongyang and red chili peppers, shake out the seeds, and finely mince them. Clean and thinly slice the garlic chives. For the kimchi, gently shake out excess filling and chop it into bite-sized pieces (about 2-3 cm).

In a bowl, place the Gamtay. Add all the ingredients for the ‘Clean & Cool Flavor Seasoning’ (2 Tbsp fish sauce, 1 Tbsp soup soy sauce, 2/3 Tbsp crushed sesame seeds, 100ml water). Gently toss to coat the Gamtay evenly with the seasoning. Taste and, if needed, add a little more fish sauce to adjust the seasoning. This completes the refreshingly clean Gamtay Kimchi.

Now, let’s make the ‘Tangy & Spicy Flavor’ Gamtay Kimchi. If you prefer this style, place the Gamtay in a sieve and lightly drain off excess moisture for about 1-2 minutes. Be careful not to drain for too long, as it can become dry. (Note: If you prefer the ‘Clean & Cool Flavor’ made earlier, you can skip this step.)

To the lightly drained Gamtay, add all the ingredients for the ‘Tangy & Spicy Flavor Seasoning’ (280g aged kimchi, 1 cup kimchi brine, 1/2 Tbsp fish sauce, 1 Tbsp crushed sesame seeds). Mix well. Adjust the seasoning with the kimchi brine to achieve a delicious tangy and spicy flavor. You can now enjoy two different delicious styles of Gamtay Kimchi according to your preference!
