Fresh Ingredients for Yukhoe (Salt Seasoning)
  • 300g Fresh Korean Beef Sirloin (Udun-sal)
  • 0.7 Tbsp Salt
  • 1.5 Tbsp White Sugar
  • 2.5 Tbsp Savory Sesame Oil
  • 0.5 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 3 Cloves Garlic (minced)
  • Pinch of Black Pepper
  • 1/4 Pear
  • 1 Slice of Cheese
  • 1 Fresh Egg Yolk
  • A few Pine Nuts (for garnish)

Cooking Instructions

Step 1

To maximize the freshness of the yukhoe, briefly store the prepared beef sirloin in the freezer for no more than 30 minutes to chill it. While the beef is chilling, you can prepare the yukhoe seasoning. Be careful not to freeze it for too long, as this can alter the meat’s texture!

Step 2

In a bowl, combine all the yukhoe seasoning ingredients and mix well. Add salt, sugar, sesame oil, pepper, soy sauce, minced garlic, and finely minced garlic cloves. Stir until the seasoning is evenly dissolved. This will form the base of your delicious yukhoe.

Step 3

It’s best to keep the pear, which will be served alongside the yukhoe, chilled in the refrigerator for a refreshing taste. Peel, core, and thinly julienne 1/4 of the pear to match the yukhoe’s texture.

Step 4

Take the beef out of the freezer after about 20 minutes of chilling. Add all the chilled beef to the prepared yukhoe seasoning. This step ensures the cold beef absorbs the seasoning nicely.

Step 5

Now it’s time to mix the beef with the seasoning. Yukhoe can quickly melt from the warmth of your hands, so it’s crucial to mix it gently and swiftly. Toss the beef lightly to ensure the seasoning coats every piece evenly. Using cold hands or chopsticks can be helpful if your hands tend to be warm.

Step 6

Arrange the mixed yukhoe attractively in a serving dish. Top it with the crisp julienned pear and savory cheese. Sprinkle some pine nuts for added aroma and texture, enhancing the dish’s visual appeal and complexity.

Step 7

Finally, place a fresh egg yolk in the center of the yukhoe to complete its smooth texture and rich flavor. Breaking the yolk and mixing it with the yukhoe just before eating will add an extra layer of creaminess and taste.

Step 8

This beautifully presented Korean beef yukhoe is not only visually appealing but also exceptionally delicious, making it the perfect accompaniment to any alcoholic beverage. Enjoy a special culinary experience at home!
