Fresh Yukhoe (Korean Beef Tartare) at Home
Make Sweet and Savory Yukhoe Easily at Home!
While dining out for Yukhoe is enjoyable, eating at home more often can increase food expenses. That’s why I decided to try making Yukhoe at home! You can enjoy it at about half the cost compared to buying it at a store, so I believe making it yourself is a great option. Honestly, pears were so expensive, I felt like I spent all my money on just the pears! It would be wonderful to make Yukhoe when pears are in season.
Main Ingredients- 200g beef for Yukhoe
- 1/2 pear
- 1 egg yolk
Cooking Instructions
Step 1
First, prepare the pear by slicing it to your preference. In the photo, I used half a pear because it was small, but if you have a larger, fuller pear, you might need less. Also, thinly slice 5 cloves of garlic to serve alongside the Yukhoe.
Step 2
Lay the Yukhoe-grade beef on paper towels and press firmly to remove as much blood as possible. Since you’ll be eating raw meat, it’s crucial to ensure freshness and prevent any issues by preparing it just before serving. This step is vital for a clean taste and safety.
Step 3
To the beef with the blood removed, add 1/3 Tbsp of salt for initial seasoning.
Step 4
Add 1/3 Tbsp of sugar, 1 Tbsp of minced garlic, and 1/3 Tbsp of plum extract to begin marinating the beef.
Step 5
Incorporate 1 Tbsp of sesame oil and 1/3 Tbsp of soy sauce for soup (Guk-ganjang) to enhance the flavor profile.
Step 6
After adding all the seasoning ingredients, gently mix everything together with your hands. The warmth from your hands can affect the meat’s flavor, so it’s best to mix quickly to ensure the seasonings are evenly distributed. Wearing disposable gloves makes the process more hygienic and efficient. Once mixed, let it marinate briefly.
Step 7
Arrange the seasoned Yukhoe in a circular shape on a serving plate, creating a slight indentation in the center. Carefully place the fresh egg yolk in the center. This completes your homemade Yukhoe! Sprinkle the sliced garlic and toasted sesame seeds over the top for an even more appealing presentation.
