Main Ingredients- Fresh Rockfish (with dark skin)

- 1/4 Carrot, julienned
- 5-7 Perilla Leaves (Kkaennip)
- 5-7 Lettuce leaves
- 1/4 Onion, thinly sliced
Special Gochujang Sauce- 5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic
- 1/2 cup Vinegar
- 1/2 Tbsp Toasted Sesame Seeds
- 1/2 cup Sugar
- 5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Minced Garlic

Cooking Instructions
Step 1
Let’s prepare the stars of our dish: the fresh sashimi! The fish with dark skin is rockfish, the white-fleshed one is flounder, and the one with a reddish tint is gizzard shad. Prepare about 150g of each type; this will be enough for two generous servings. Purchase fresh sashimi-grade fish and slice it thinly.
Step 2
Add a generous amount of fresh vegetables from your refrigerator to enhance the Hoedeopbap’s vibrant texture and flavor. Lettuce and aromatic perilla leaves are highly recommended, especially when in season. Wash the lettuce and perilla leaves thoroughly, pat them dry, and chop them into bite-sized pieces. Julienne the carrot and thinly slice the onion.
