Ingredients- 3 cups rice flour (approx. 300g)
- 20 fresh strawberries
- 3-4 Tbsp sugar (adjust to taste)
- 2 Tbsp strawberry jam (optional, as a filling substitute)
Cooking Instructions
Step 1
First, prepare 3 cups of rice flour (approx. 300g) and 20 fresh strawberries for making delicious strawberry baekseolgi. It’s best to use non-glutinous rice flour (mepssal garu). Wash the strawberries and remove their green tops. (This recipe makes approximately 4 servings.)
Step 2
Place about 15-20 strawberries into a blender and blend them into a smooth puree to make strawberry juice. If you don’t have a blender, you can finely chop them with a knife or food processor. If you plan to use strawberry jam, you can also add 2 tablespoons of strawberry jam at this stage and blend it together.
Step 3
Measure 3 cups of rice flour using a standard paper cup (approx. 300g) and place it in a bowl. Gradually add the blended strawberry juice to the rice flour, mixing it with your hands like kneading dough until a batter forms. It’s important to adjust the amount of strawberry juice to avoid making the batter too watery. Once the dough starts to come together, add 3 tablespoons of sugar and mix well to sweeten. Feel free to adjust the sugar quantity to your preference.
Step 4
Line a steaming basket or baekseolgi mold with a damp cheesecloth. Pour about half of the prepared strawberry batter into the mold and gently press it down with your palm to create a flat surface. Ensuring an even height for the rice cake will help it cook evenly.
Step 5
(Optional step) If you’d like to add extra flavor, spoon 1-2 tablespoons of strawberry jam or cinnamon apple jam onto the batter. This will create a sweet and delicious filling, similar to red bean paste. You can skip this step if you don’t have jam.
Step 6
Pour the remaining strawberry batter on top of the first layer. Gently smooth the surface with your hands. Be careful not to press down too hard, and aim for a slightly mounded shape overall.
Step 7
Once the water in the steamer is boiling vigorously, place the mold with the baekseolgi batter inside. Cover with a lid and steam for about 20-25 minutes. To check if it’s cooked, insert a skewer or toothpick; it should come out clean. Make sure there’s enough water in the steamer throughout the cooking process.
Step 8
While the baekseolgi is steaming, prepare a few fresh strawberries for decoration. Slice them nicely. You can also use small strawberry-shaped cookie cutters for a fun touch. Ensure your decorations are bite-sized and visually appealing.
Step 9
Once the baekseolgi is fully steamed, remove it from the steamer and let it cool slightly. Cut it into desired serving sizes. Cutting it while too hot might cause it to crumble, so it’s best to let it cool down a bit first. You can cut it into squares or triangles, whichever you prefer.
Step 10
Arrange the pre-cut decorative strawberries on top of the sliced baekseolgi. If you wish to package them more elaborately, let the rice cakes cool completely, then wrap each piece individually in food wrapping paper for a lovely gift.
