Fresh Surf Clam Doenjang Jjigae: The Essence of a Refreshing and Deep Broth
A Delicious Meal with Refreshing Surf Clam Doenjang Jjigae!
After enjoying various dishes like liquor steamed clams, spicy cold salad, and pancakes with 3kg of fresh surf clams (dongjuk), today I’m making a hearty doenjang jjigae with the remaining clams! The harmony of the refreshing broth and chewy clams is truly the best! This is a final dish to make great use of the leftover clams.
Main Ingredients- 20 well-purged surf clams (dongjuk)
- A small piece of radish (cubed)
- 1/4 Korean zucchini (half-moon slices)
- 1/2 pack of oyster mushrooms
- 2 Korean green chili peppers (diagonally sliced)
- 1/2 Tbsp minced garlic
- 1 Tbsp homemade doenjang (soybean paste)
- 1/2 stalk of green onion (chopped)
Cooking Instructions
Step 1
First, place the cubed radish and purged surf clams in a pot. If you are using frozen surf clams, it’s best to add them from the beginning and boil them. The refreshing flavor that comes out of the clams will add depth to the broth.
Step 2
If you are using fresh live clams, you can add them after the water starts boiling. This way, you can maintain the freshness of the clams and achieve a clean taste.
Step 3
Once the broth is boiling vigorously, dissolve the homemade doenjang. It’s recommended to dissolve the doenjang through a sieve for a smoother broth. The savory aroma of the doenjang will fill the air.
Step 4
After dissolving the doenjang, add the sliced Korean zucchini, diagonally sliced Korean green chili peppers, and the torn oyster mushrooms, and let it boil together. The sweetness and umami from the vegetables and mushrooms will enhance the flavor of the doenjang jjigae.
Step 5
When all the ingredients have simmered together for a bit, finally add the chopped green onion and minced garlic and boil for another moment. The refreshing taste of the green onion and the pungent aroma of garlic will add to a deeper and cleaner doenjang jjigae. Let it boil a little longer to allow the flavors of the ingredients to fully meld.

Your savory and refreshing surf clam doenjang jjigae is complete! Enjoy it with a bowl of freshly cooked warm rice. The refreshing taste of the clams and the savory doenjang combine to make it a perfect rice accompaniment.
