We’ve made a delicious syrup using strawberries, a representative and beloved fruit in Korean cuisine. This syrup captures the authentic, sweet and tangy flavor of seasonal strawberries, perfect for various drinks.
Main Ingredients- 400g fresh strawberries
- 2 Tbsp vinegar (for washing strawberries)
Seasoning & Others- 300g granulated sugar (adjust based on strawberry sweetness)
- 1 tsp salt (enhances sweetness)
- 1 Tbsp lemon juice (optional: for added tanginess)

Cooking Instructions
Step 1
Place the fresh strawberries in a large bowl. Pour enough cold water to fully submerge the strawberries and add 2 tablespoons of vinegar. Gently mix the strawberries in the vinegar water and let them soak for just 1 minute. This step helps remove any residual pesticides. Afterwards, rinse them thoroughly under running water.
Step 2
Gently pat the rinsed strawberries dry with paper towels. Trim off the green tops of the strawberries with a knife. Then, slice the strawberries into small pieces, about 0.5cm to 1cm thick. Avoid slicing them too thinly, as they might become mushy; aim for a moderate size.
Step 3
Transfer all the sliced strawberries into a clean bowl. This will form the base of your strawberry syrup.
Step 4
Add 300g of granulated sugar and 1 tsp of salt to the bowl with the strawberries. If your strawberries are less tart than usual, or if you prefer a more tangy flavor, add 1 tablespoon of lemon juice at this stage. The general ratio is about 70-80% sugar to strawberry weight, but feel free to adjust the amount based on the sweetness of the strawberries and your personal preference.
Step 5
Gently mix the strawberries, sugar, and salt (and lemon juice, if using) until the sugar begins to dissolve. Stir gently to avoid mashing the strawberries. Once the sugar has started to melt, carefully transfer the strawberry mixture into a sterilized glass jar. Store the jar at room temperature for 1-2 days to allow the sugar to fully dissolve and the syrup to begin maturing. After that, store it in the refrigerator. While you can enjoy it immediately, waiting 3-4 days after refrigerating will deepen the strawberry flavor and aroma, making it even more delicious. The finished strawberry syrup can be enjoyed as a refreshing ade by mixing it with water, or as a delightful strawberry latte by adding it to milk, which children particularly love!
