These fresh spring rolls are packed with crisp vegetables, succulent shrimp, and tender crab sticks, all wrapped in delicate rice paper and perfect for dipping into a rich and savory peanut sauce. It’s a dish I often prepare for my family, and it’s a wonderful way to enjoy a healthy and satisfying meal.

Spring Roll Ingredients

  • 4 sheets of rice paper (adjust quantity as needed)
  • 12 medium-sized cooked cocktail shrimp (peeled and deveined)
  • 1/4 head of lettuce (shredded or torn into bite-sized pieces)
  • 2 imitation crab sticks (shredded)
  • 1/4 cucumber (seeds removed, thinly julienned)

Creamy Peanut Dipping Sauce

  • 2 tablespoons peanut butter (creamy style recommended)
  • 1 tablespoon mayonnaise
  • 1 tablespoon lemon juice
  • 1/2 tablespoon soy sauce
  • 1 tablespoon honey or allulose (for sweetness)

Cooking Instructions

First, cook the cocktail shrimp in boiling water for about 2-3 minutes, or until they turn pink and opaque. Drain and rinse them under cold water. Once cooled, remove the tails. For the imitation crab sticks, gently shred them lengthwise into smaller pieces.

Wash the lettuce thoroughly under running water, then gently pat or spin it dry. Tear or shred it into bite-sized pieces. For the cucumber, trim off the ends, remove the seeds with a spoon or knife, and then slice it thinly into julienne strips for a tender texture.

Now, let’s make the delicious peanut sauce! In a small bowl, combine 2 tablespoons of peanut butter, 1 tablespoon of mayonnaise, 1 tablespoon of fresh lemon juice, 1/2 tablespoon of soy sauce, and 1 tablespoon of honey (or allulose). Whisk everything together vigorously with a fork or a small whisk until the sauce is smooth and well-combined. You can adjust the consistency by adding a little more mayonnaise or a splash of water if needed.

Prepare a shallow dish with warm water. Dip one sheet of rice paper into the warm water for about 15-20 seconds, until it becomes pliable, then carefully lift it and let any excess water drip off. Lay the softened rice paper flat on a clean surface or a plate. Arrange a generous layer of shredded lettuce near the bottom edge. Top with the shredded imitation crab, and place 3 cooked shrimp horizontally on top of the crab. Carefully fold in the sides of the rice paper, then roll it up tightly from the bottom to create a neat spring roll. Repeat this process with the remaining rice paper and fillings until all ingredients are used.
