Cooking Instructions
Step 1
1. Bomdong and Smoked Duck Rolls: Prepare the Bomdong by cleaning it and blanching it in boiling water. Immediately rinse in cold water and squeeze out excess moisture. Pan-fry the smoked duck meat over medium heat to render out some of its fat. Lay out the blanched Bomdong leaves and place the cooked duck on top. Roll them up tightly. Slice into bite-sized pieces and serve with a soy sauce dressing.
Step 2
Slice the prepared Bomdong and smoked duck rolls diagonally into about 1/2-inch thick pieces. Arrange them attractively on a serving plate.
Step 3
2. Pan-Fried Tofu: Press the tofu using paper towels to remove excess water. Cut the tofu into your desired serving size pieces. Lightly sprinkle salt over the tofu slices for seasoning. Dip each slice into beaten egg to coat evenly. Pan-fry in a lightly oiled skillet over medium heat until golden brown and crispy on both sides. Your delicious pan-fried tofu is ready!
Step 4
3. Bomdong Salad (Geotjeori): Wash the Bomdong thoroughly, removing any wilted outer leaves. Drain very well, then cut into bite-sized pieces. In a bowl, combine the cut Bomdong with minced garlic, Gochujang-vinegar sauce (Cho-gochujang), sesame oil, and salt. Gently toss everything together with your hands until well combined to create a fresh and vibrant salad. (Tip: If you don’t have individual ingredients like vinegar or gochujang, don’t worry! Using pre-made Cho-gochujang from the fridge works wonderfully and results in a delicious salad. It’s all about making the best of what you have! ^^)
Step 5
4. Beef and Bomdong Hot Pot (Jeongol): Prepare the Bomdong for the hot pot by washing and cutting it into manageable pieces. Clean the oyster mushrooms and separate them into strands. Thinly slice the onion. Mince the garlic. Marinate the beef by mixing it with soy sauce, minced garlic, and black pepper.
Step 6
In a pan, stir-fry the marinated beef over medium-high heat until it’s about halfway cooked. Add the sliced onion, prepared mushrooms, and cut Bomdong to the pan. Continue to stir-fry until the vegetables start to soften slightly.
Step 7
Pour the prepared broth into the pan with the stir-fried ingredients. Bring to a boil, then let it simmer. Taste the broth and adjust the seasoning with salt if needed. Your comforting and flavorful Beef and Bomdong Hot Pot is now complete and ready to be enjoyed.
