Vibrant and Fresh Spinach Geotjeori
Spinach is a nutrient-rich, alkaline vegetable packed with vitamins, iron, and dietary fiber, making it an excellent food for pregnant women and growing children. Enjoy this delicious and crisp fresh spinach salad!
Main Ingredients & Dressing- 1 bunch fresh spinach
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 1/2 cup chopped scallions (green onions)
- 3 Tbsp fish sauce or soy sauce (adjust to taste)
Cooking Instructions
Step 1
First, prepare one bunch of fresh spinach. Trim the root ends neatly. Wash the spinach thoroughly under running water multiple times to remove any soil. After washing, place the spinach in a colander to drain excess water completely. (Tip: You can use the entire bunch, or for a more tender texture, focus on using only the tender inner leaves.)

While the spinach is draining, let’s make the delicious dressing. In a clean bowl, add 1 tablespoon of gochugaru (Korean chili flakes).

Next, add 1 tablespoon of minced garlic to the bowl with the chili flakes. Minced garlic will add a wonderful depth of flavor to the dressing.

Add 1 tablespoon of sesame oil to the dressing bowl for a nutty aroma and rich taste. Sesame oil significantly enhances the flavor of the spinach geotjeori.

Add 1 tablespoon of toasted sesame seeds generously. Sesame seeds add a delightful nutty flavor and also enhance the visual appeal of the dish.

Add 1/2 cup of freshly chopped scallions (green onions) to the dressing. The mild pungency of the scallions will further enrich the taste of the spinach geotjeori.

Finally, add 3 tablespoons of fish sauce or soy sauce. Start with 3 tablespoons, and after mixing with the spinach, taste and add more if needed to suit your preference.

Using a spoon or spatula, mix all the dressing ingredients in the bowl until well combined. Your flavorful dressing is now ready.

Transfer the well-drained spinach to a large mixing bowl. Sprinkle the prepared dressing evenly over the spinach. Gently toss the spinach to coat each leaf with the dressing, being careful not to break or mash the delicate leaves. Think of it as coating the spinach with a flavorful glaze.
