Ingredients

  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 12 cooked medium-sized shrimp
  • 12 rice paper wrappers
  • Sweet chili sauce or peanut sauce, to taste
  • 2 large lettuce leaves

Prepare your cooked shrimp. If you’re using small cocktail shrimp, aim for about 3 shrimp per roll. For medium-sized cooked shrimp, 1 per roll is perfect. If your shrimp are not already cooked, steam them for about 15 minutes until opaque, then peel them once slightly cooled.

Wash the bell peppers and onion thoroughly and pat them dry. Thinly julienne the red bell pepper, yellow bell pepper, and onion. For extra flavor and texture, you can also add thinly sliced egg omelet or other crisp vegetables like cucumber or carrots.

To soften the rice paper wrappers, boil a generous amount of water in a kettle or pot. Pour the hot water into a wide, shallow dish. Dip one rice paper wrapper into the hot water for about 3 seconds, then carefully lift it out. It should be pliable. Replenish the hot water as it cools to keep the wrappers easy to work with. Be careful not to oversoak, as they can tear.

Assemble your rolls! Lay a softened rice paper wrapper flat. Arrange a portion of the julienned vegetables, a shrimp (or two), and a piece of lettuce in the center. Fold in the sides of the wrapper, then tightly roll it up from the bottom, like a burrito. If the wrapper sticks to your work surface, lightly dampen the surface with water. You can cut the rolls in half for easier handling and presentation, but be gentle to avoid tearing the rice paper. Including lettuce adds a lovely green color contrast, especially when cut in half.

Arrange the finished summer rolls on a serving plate, making sure they don’t touch each other to prevent sticking. You can also add some fresh fruit slices, like mango or pineapple, in between the rolls for a colorful and refreshing touch. Serve immediately with your favorite sweet chili sauce or creamy peanut sauce for dipping.
