  • 1/4 onion
  • 1/4 pear
  • 1/4 Korean radish (daikon)
  • 1 handful of green onions
  • 1 Tbsp coarse salt (for washing oysters)

Seasoning Ingredients

  • 2 Tbsp fish sauce (anchovy or similar)
  • 3 Tbsp chili powder (gochugaru)
  • 1.5 Tbsp minced garlic
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Gently wash the fresh oysters with 1 Tbsp of coarse salt, rubbing them carefully with your hands. Rinse them about 4 times until the water runs clear, removing any impurities. Drain the oysters thoroughly in a colander. Add the roughly chopped pear and 1.5 Tbsp minced garlic to the well-drained oysters and toss lightly. Let them marinate for a bit. (The sweetness from the pear and the aroma of the garlic will infuse into the oysters, enhancing their flavor.)

Sprinkle a pinch of salt over the thinly sliced onion and Korean radish, and let them sit for about 15 minutes to pickle.
