Main Ingredients- 10 sheets Perilla leaves
Seasoning Ingredients- 1 Tbsp Soy sauce
- 1 Tbsp Fish sauce
- 1/2 tsp Sugar
- 1/2 tsp Gochugaru (Korean chili flakes)
- 2/3 Tbsp Water
- 1/2 Tbsp Toasted sesame seeds
- 1 Tbsp Soy sauce
- 1 Tbsp Fish sauce
- 1/2 tsp Sugar
- 1/2 tsp Gochugaru (Korean chili flakes)
- 2/3 Tbsp Water
- 1/2 Tbsp Toasted sesame seeds
Cooking Instructions
Step 1
First, wash the perilla leaves thoroughly under running water, both front and back, and gently pat them dry. Make sure the leaves are fresh, as this is key to the flavor of the side dish.
Step 2
In a small bowl, combine 1 Tbsp of soy sauce, 1 Tbsp of fish sauce, 1/2 tsp of sugar, and 1/2 tsp of gochugaru. Stir well with a spoon until the sugar is completely dissolved. Properly mixing the seasoning ensures it coats the perilla leaves evenly.
Step 3
Once the sugar is fully dissolved, add 2/3 Tbsp of water and taste the seasoning. The dressing should be balanced – not too salty, not too bland, and full of umami. Feel free to adjust the seasoning to your preference.
Step 4
Finally, add 1/2 Tbsp of toasted sesame seeds for a nutty aroma and mix gently to complete the dressing. The nutty flavor of sesame seeds will enhance the overall taste of the perilla leaves.
Step 5
Now it’s time to dress the perilla leaves. Prepare a container with a lid. Stack the perilla leaves one by one. As you layer each leaf, spread the dressing from the stem side outwards. You don’t need to coat the very tip of the leaves; the delicious seasoning will permeate them sufficiently.
Step 6
You can enjoy the perilla leaf side dish seasoned with soy sauce dressing right away, but for an even better experience, cover the container tightly and refrigerate it for a while before serving. Chilling the leaves makes them crisper and enhances their freshness, leading to a more delightful taste.
Step 7
Enjoy this aromatic and delicious fresh perilla leaf side dish with soy sauce! Serve it proudly on your dining table.
