Nutrient-Rich Pea Spread: An Easy Homemade Recipe
Create a delicious spread using sweet and fresh peas harvested in June. Peas are rich in carbohydrates, protein, and vitamin B1, making them a healthy choice. This pea spread is perfect for toasting or as a dip, and it’s incredibly simple to make.
Main Ingredients- 150g fresh peas (thaw if using frozen peas)
- 1 Tbsp minced garlic
- 1 Tbsp fresh lemon juice
- Pinch of salt
- Pinch of black pepper
- 3 Tbsp extra virgin olive oil
Cooking Instructions
Step 1
First, prepare the peas by blanching them. Bring a pot of water to a boil, add the peas, and blanch for about 3-5 minutes. Be careful not to overcook, as this can alter the fresh color and make the peas mushy. Drain the blanched peas and rinse them under cold water to cool, then thoroughly drain any excess water.
Step 2
Get your blender or food processor ready. In the bowl, combine the blanched peas, finely minced garlic, fresh lemon juice, a pinch of salt, and a pinch of black pepper. Finally, drizzle in 3 tablespoons of extra virgin olive oil. Blend until everything is smoothly incorporated. Adjust the blending time to achieve your desired spread consistency; a slightly chunky texture can also be delicious.
Step 3
Transfer the smooth pea spread to a nice serving bowl. For extra flair, you can drizzle a little more olive oil on top or garnish with freshly chopped herbs like parsley. It’s ready to be enjoyed immediately. For best flavor, refrigerate for 2-3 days.
