Today’s home cooking recipe is a fresh lettuce salad made with vibrant vegetables grown right in my rooftop garden. With the forecast predicting rain, I quickly harvested and tossed these greens. Lettuce salad is a frequent side dish in our home during the summer. It’s so simple to make with freshly picked garden vegetables that it almost feels silly to call it a recipe! This crunchy salad, perfect as a wrap accompaniment, is incredibly delicious. Even beginners can whip this up in minutes for a refreshing and flavorful addition to any meal.

  • Crab sticks (imitation crab meat), a small amount

  • Korean chili flakes (Gochugaru) 1.5 Tbsp
  • Soy sauce 2 Tbsp
  • Minced garlic 1 tsp
  • Oligosaccharide 1 tsp (or sugar)
  • Sugar 1 tsp (can adjust sweetness)
  • Sesame oil 1 tsp
  • Toasted sesame seeds, a pinch
  • Vinegar, to taste (optional)

Cooking Instructions

These are the fresh vegetables I harvested from my rooftop garden just before the rain! There’s quite a variety, isn’t there? Haha. I seem to harvest this much almost every day.

Wash the lettuce and all other wrap vegetables thoroughly under running water. Then, let them drain well in a colander. Removing excess water is key to a well-seasoned salad.

I’m using up leftover bell pepper and crab sticks from when I made pickled radish wraps a few days ago. Slice the bell pepper into bite-sized pieces and shred or cut the crab sticks. These additions will bring color and a delightful texture to the salad.

Now, let’s prepare the delicious dressing. In a bowl, combine the gochugaru, soy sauce, minced garlic, oligosaccharide, sugar, sesame oil, and sesame seeds. Mix them well. If you enjoy a tangy flavor, feel free to add a little vinegar – I added a touch for extra brightness.

In a large bowl, combine the drained lettuce and other vegetables with the prepared bell pepper and crab sticks.

Pour the prepared dressing over the ingredients in the bowl. Gently toss everything together with your hands. Be careful not to mash the vegetables; a gentle mix is best to keep them crisp. It’s ideal to dress the lettuce salad right before serving to maintain its crunchy texture. If dressed too early, the vegetables will wilt and release water.
