I bought a huge bunch of fresh lettuce from the market day and decided to make a refreshing salad instead of using them for wraps. I got a massive bag of lettuce, as big as a large grocery bag, for only 2,000 won – a truly rare find! It was super fresh, just harvested from the field. After washing and packing some tightly into a kimchi container, I still had a whole bunch left. So, I decided to turn the rest into a delicious salad. The tangy and sweet dressing, paired with a savory pancake, made it even more delightful. The crispiness of the fresh lettuce and the flavorful dressing create a wonderful taste.

Ingredients

  • 10 perilla leaves
  • 1/8 carrot
  • 15 lettuce leaves
  • 3 Tbsp vinegar
  • 2 Tbsp plum extract (maesilcheong)
  • 1 Tbsp clear anchovy sauce (myeolchi-aekjeot)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp fine red chili powder (gochugaru)
  • 1/2 Tbsp toasted sesame seeds
  • 1/2 Tbsp sesame oil

Cooking Instructions

Step 1

First, thinly julienne the 10 perilla leaves into coarse strips. Also, thinly julienne 1/8 of a carrot for added color and a hint of sweetness.

Take the 15 lettuce leaves, which are larger than an adult’s palm, and tear or cut them into large pieces, about 4 to 6 sections each. Avoid cutting them too small, as this can diminish their refreshing crunch.

Now, let’s make the delicious dressing. In a large bowl, add 3 tablespoons of vinegar. To this, add 2 tablespoons of plum extract for sweetness, 1 tablespoon of clear anchovy sauce for umami, 1/2 tablespoon of minced garlic for a subtle pungent kick, and 1 tablespoon of fine red chili powder for a mild heat. Finally, add 1/2 tablespoon of toasted sesame seeds for nuttiness and 1/2 tablespoon of sesame oil for aroma. Whisk everything together thoroughly with a spoon until well combined.

Gently add the prepared julienned perilla leaves and carrots, along with the large pieces of lettuce, into the dressing. Toss everything together lightly with your hands to ensure the dressing coats all the ingredients evenly. Be careful not to mix too vigorously, as this can bruise the lettuce.
