Introducing a unique way to enjoy fresh halibut, the ‘Halibut Mini Burger’! These burgers offer a delightful taste without any hesitation and are incredibly easy to make and eat. Using domestic, fresh halibut, we create a crispy exterior and a moist interior. You can customize the flavor by pairing it with your preferred sauce, such as our homemade Olive Mayonnaise or a zesty Sriracha sauce. It’s a perfect treat for brunch or a snack!
Burger Ingredients- 120g prepared halibut fillet (use fresh)
- 2 mini brioche buns
- 2 slices cheddar cheese (cut to fit the halibut patty size)
- 50g onion (thinly sliced)
- 40g all-purpose flour (for coating)
- 1 egg (for coating, beaten well)
- 20g breadcrumbs (for a crispy coating)
- Pinch of black pepper (for seasoning the halibut)
Refreshing Olive Mayonnaise Sauce- 3 olives (finely chopped)
- 20g mayonnaise
- Pinch of sugar (to adjust sweetness)
- Squeeze of lemon juice (for brightness)

- 10g sriracha sauce
- 3 olives (finely chopped)

Cooking Instructions
Step 1
Begin by preparing all the ingredients for your burgers. Thinly slice the onion and cut the cheddar cheese to match the size of your halibut patties. Finely chop the olives for the olive sauce.
Step 2
Prepare the fresh halibut fillet. If it’s too thick, slice it in half horizontally to create thinner pieces that fit the size of the mini brioche buns. This ensures even cooking and easier eating.
Step 3
Place a slice of cheddar cheese, cut to the size of the halibut, onto one piece of halibut. Then, cover it with the other piece of halibut, creating a sandwich-like patty. The cheese will help bind the pieces together as it melts.

Thinly slice the onion as desired. These will add a wonderful flavor to your burger.

Now, let’s coat the halibut patties. First, dust each patty evenly with all-purpose flour. This layer helps the egg wash adhere better, preventing the coating from falling off during frying.

Next, dip the flour-coated halibut patties into the beaten egg wash, ensuring they are fully coated.

Finally, generously coat the patties with breadcrumbs. Gently press the breadcrumbs onto the patties to ensure they stick well, which will result in a crispier texture.

Heat a generous amount of oil in a pan to 180°C (350°F). Carefully place the breaded halibut patties into the hot oil. Fry for about 3 minutes on each side, or until golden brown and cooked through. Keep an eye on the color to prevent burning.

Let’s make the sauces! *For the Olive Mayonnaise Sauce: Combine the finely chopped olives, mayonnaise, a pinch of sugar, and a squeeze of lemon juice. Mix well. (The sauce in the photo is the olive sauce.) *For the Sriracha Sauce: Simply mix the mayonnaise and sriracha sauce.
Step 10
Slice the mini brioche buns in half. Spread your chosen sauce on the inside of each bun. Layer the sliced onions and the crispy fried halibut patty on top. You can add an extra drizzle of sauce if you like. Your delicious Halibut Mini Burgers are now complete! Enjoy your meal!
