Spring Vegetable Delight! Easy Recipe for Fresh Garlic Scape Salad (Raw Garlic Scape Salad)
Hello everyone! This is Kim Jin-ok. Spring is here, and fresh garlic scapes are abundant, delicious, and affordable right now. Following up on my previous recipes for pickled garlic scapes and garlic scape kimchi, today I’m sharing a recipe for a vibrant raw garlic scape salad that will surely awaken your appetite! This salad is absolutely delightful when served alongside grilled pork belly, enhancing its savory flavors.
**[Ingredients (Serves 3-4)]**
* 300g fresh garlic scapes (after trimming)
* 2.5 Tbsp gochugaru (Korean chili flakes)
* 2 Tbsp soy sauce
* 1.5 Tbsp fish sauce (anchovy or sand lance sauce)
* 2 Tbsp sesame oil or perilla oil
* 2 Tbsp vinegar
* 1.5 Tbsp sugar (can substitute with corn syrup or plum extract)
* 1 Tbsp ground sesame seeds
**[Measurements]** Based on a standard Korean rice spoon (1 Tbsp ~ 15ml)

**[Tips]**
* The 300g of trimmed garlic scapes means after removing the roots and any dirty outer leaves or tough, yellowing green leaves.
* Taste the salad after mixing and adjust seasonings according to your preference.
* It’s best to enjoy this raw garlic scape salad immediately after making it, so we recommend preparing only the amount you plan to eat at once!
* Garlic scapes can also be used in place of green onions in soups, or added to chicken stew (baeksuk) for a wonderful flavor boost!

Cooking Instructions
Step 1
1. Prepare the fresh garlic scapes: Trim off the root ends. Remove any dirty outer leaves and any green leaves that are yellow or tough. Aim for about 300g of prepared garlic scapes. (Tip: Garlic scapes are also delicious added to soups in place of green onions, or simmered with chicken for baeksuk!)

2. Wash the prepared garlic scapes thoroughly under running water. Once washed, cut them in half lengthwise, then chop them into bite-sized pieces.

3. When you cut the garlic scapes in half, you might sometimes find soil accumulated where the green leafy part meets the white stem. Soaking the cut scapes in water for a short while will help remove any hidden soil. After removing the soil, gently separate the bundled scape pieces.

4. Drain the garlic scapes well after soaking them. Shake them gently to remove excess water. This helps the dressing adhere better and prevents the salad from becoming watery.
Step 5
5. Now, let’s make the dressing. In a bowl, combine 2 Tbsp sesame oil (or perilla oil), 1 Tbsp ground sesame seeds, 2.5 Tbsp gochugaru, 2 Tbsp soy sauce, 1.5 Tbsp fish sauce, 1.5 Tbsp sugar, and 2 Tbsp vinegar. Mix everything thoroughly until well combined. Add the drained garlic scapes to the dressing and gently toss until evenly coated. This completes your delicious fresh garlic scape salad! Taste it and add more seasoning if needed, according to your preference. Since this salad is best enjoyed fresh, make only as much as you intend to eat right away!
