They’re incredibly easy to follow, even for beginner cooks, requiring just rice paper, fresh vegetables, and your choice of protein. They are wonderfully filling and a great option for a healthy diet. I’ve used beef here, but feel free to substitute it with pork or chicken based on your preference. You can even omit the meat entirely! The beauty of Vietnamese spring rolls lies in their versatility; you can wrap them with any ingredients you think will taste delicious. Ingredients

  • Rice paper wrappers (as needed)

  • 1/2 cucumber
  • 1 onion
  • Pineapple (to taste)
  • 10 lettuce leaves
  • Beef (thinly sliced or for shabu-shabu, substitute with pork or chicken)
  • Water (enough to cover onions)
  • 2 Tbsp sugar
  • 3 Tbsp vinegar
  • Chili sauce (or peanut sauce, optional)

This recipe is for about 2-3 servings. Start by preparing your rice paper wrappers; have as many as you think you’ll need ready.

Take half a carrot and julienne it into thin strips. This will add a nice crunch and color.

Prepare half a cucumber by also cutting it into thin, matchstick-like strips. Ensure they’re not too thin so they retain their crispness.

Slice one onion thinly. Place the sliced onion in a bowl, add enough water to cover it, along with 2 tablespoons of sugar and 1 tablespoon of vinegar. Let it soak for a bit. This process removes the onion’s sharp bite and adds a subtle sweetness.

Wash 10 lettuce leaves thoroughly. Roll them up tightly and slice them lengthwise into thin strips, making them easier to wrap.

Instead of frying, I’ve opted to poach the beef to avoid excessive oil splatter. Bring 250ml of water to a boil with 25g of beef broth powder (like for pho) and a pinch of black pepper. Once boiling, add thinly sliced beef and cook briefly until just done. Don’t overcook it.
