Ingredients- 2 slices of bread (rye or whole wheat bread are also great!)
- 1 ripe avocado
- 2 fresh eggs
- 1 Tbsp lemon juice
- 4 pinches of salt (3 for avocado, 1 for egg)
- A pinch of black pepper
- A little olive oil (for toasting bread)
Cooking Instructions
Step 1
First, halve the avocado, remove the pit, and scoop out the flesh into a bowl. Use a fork to gently mash the avocado. It’s nice to leave some small chunks for texture rather than mashing it completely smooth. To prevent browning and add a touch of freshness, mix in 1 tablespoon of lemon juice and 3 pinches of salt. Set aside.
Step 2
Preheat a frying pan over medium-low heat and add a little olive oil. Place the bread slices (or rye/whole wheat bread) in the pan and toast them on both sides until golden brown and appetizing. Toasting the bread enhances its flavor and aroma.
Step 3
While the bread is toasting, use another pan or wipe the bread pan clean to fry the eggs. Cook them to your preferred style – I personally love a runny yolk!
Step 4
Once the bread is nicely toasted, spread the mashed avocado generously over each slice. Be sure to cover the bread completely for a truly satisfying bite.
