Hearty Salad Made with Chicken Breast and Fresh Vegetables
I try to eat at least one meal a day for my health and my family’s well-being. This salad, featuring fresh vegetables, lean chicken breast, and pan-fried tofu and mushrooms, is both delicious and nutritious. Enjoy a light yet satisfying meal with a balsamic vinaigrette to awaken your taste buds!
Main Ingredients- Chicken breast (Sujis brand) 1 pack
- Carrot 1/5
- Kale 10 leaves
- Bell pepper 1/4
- Tofu 1 block
- Shiitake mushrooms 5
- Broccoli 1/4 head
Cooking Instructions
Step 1
First, wash and prepare all the vegetables for the salad. Thinly slice or julienne the carrot. Remove the seeds from the bell pepper and cut it into similar-sized pieces. For the kale, remove the tough stems and chop it into bite-sized pieces. For the broccoli, separate the florets and blanch them in boiling water for a slightly softer texture. Take the chicken breast out of the package and cut it into appropriate (bite-sized) pieces.
Step 2
Drain the tofu and cut it into 1.5-2cm thick slices. Remove the stems from the shiitake mushrooms, keeping only the caps. Heat 1-2 tablespoons of olive oil in a pan over medium heat. Add the sliced tofu and shiitake mushrooms and pan-fry until golden brown on both sides. This step enhances the nutty flavor of the tofu and the rich aroma of the shiitake mushrooms, elevating the salad’s taste.
Step 3
Now it’s time to arrange all the ingredients beautifully in a bowl. Add the prepared chicken breast, julienned carrots, kale, bell peppers, and blanched broccoli attractively. Top with the golden-brown pan-fried tofu and shiitake mushrooms for a colorful and appetizing salad. Arranging the ingredients so their colors harmonize will add visual appeal.

Finally, finish the salad by drizzling balsamic vinegar for an extra touch of flavor. You can also add balsamic dressing or your favorite dressing according to your preference.
