We absolutely adore Vietnamese spring rolls! I tried making them at home, and they turned out wonderfully. You can easily create delicious Goi Cuon right in your kitchen. This recipe focuses on fresh ingredients and simple preparation for a delightful meal.

  • 1 package of rice paper wrappers
  • 2 bell peppers (various colors like red and yellow)
  • 1/2 carrot
  • 1 cucumber
  • 1 pack of bean sprouts
  • 1/2 onion

First, thinly slice half an onion and soak it in cold water for about 10 minutes to mellow its sharp flavor. Gently rinse the bean sprouts under running water and drain them.

Wash the cucumber thoroughly. Using a vegetable peeler, create a ‘peeled’ effect by running it down the sides of the cucumber (you can skip peeling the skin entirely or just remove strips). Then, slice it thinly into strips, avoiding the seedy core.

Similarly, peel the half carrot and slice it thinly into matchsticks, similar in thickness to the cucumber. This will add a delightful crunch.

Prepare the red bell pepper by removing the seeds and stem, then washing it. Slice it thinly into strips. Its vibrant color will make your spring rolls visually appealing.

If you prefer peanut sauce, you can easily make your own: combine peanut butter with a little bit of the syrup from a can of pineapple. Whisk until smooth for a wonderfully sweet and nutty homemade sauce!

Place your desired amount of fresh vegetables (and perhaps some cooked fillings like tteokgalbi or shrimp) onto the softened wrapper. Roll it up snugly.
