Using leftover sushi sauce from making inari sushi makes this a quick and easy way to enjoy restaurant-quality sushi at home!

Ingredients

  • 200g Mantis Shrimp (fresh is best)
  • 1 bowl Warm Cooked Rice (turmeric rice recommended)
  • 1 tsp Sashimi Soy Sauce
  • 3 Tbsp Fresh Wasabi Paste (adjust to taste)
  • 30g Sushi Vinegar Packet (from Inari sushi kit, or homemade)

First, gently thaw the frozen mantis shrimp by placing them in the refrigerator. Once fully thawed, remove the heads and tails of the mantis shrimp, then carefully peel them to reveal the fresh, succulent shrimp meat. Handle the shrimp gently to maintain their shape.

To the warm cooked rice (turmeric rice adds a lovely color and subtle flavor), add the 30g of sushi vinegar packet that was leftover from making inari sushi, and mix well to combine. This packet essentially acts as a seasoned vinegar mixture. If you’re making your own seasoned vinegar, a 1:1 ratio of rice vinegar and sugar works well.

Lightly wet your hands and form the seasoned rice into small sushi shapes. Place a dollop of fresh wasabi paste on top of each rice ball, followed by a piece of the prepared mantis shrimp. (Tip: If you have extra mantis shrimp or want to add another texture, you can mix the shrimp with some of the leftover sashimi and dress it lightly with a spicy-sweet vinegar sauce before topping the sushi.) Your delicious and fresh mantis shrimp sushi is now complete! Enjoy your meal!
