Main Ingredients- 1 mackerel (cleaned)
- 2 Tbsp potato starch
- 2 Tbsp all-purpose flour
Yuzu Glaze Sauce- 1 Tbsp yuzu marmalade
- 1 Tbsp cooking wine (e.g., mirin)
- 2 Tbsp oligosaccharide
- 1 tsp sesame oil
- 3 Tbsp soy sauce
- 1 Tbsp plum extract (maesil cheong)
- Pinch of ginger powder (optional)
- 1 Tbsp yuzu marmalade
- 1 Tbsp cooking wine (e.g., mirin)
- 2 Tbsp oligosaccharide
- 1 tsp sesame oil
- 3 Tbsp soy sauce
- 1 Tbsp plum extract (maesil cheong)
- Pinch of ginger powder (optional)
Cooking Instructions
Step 1
First, prepare the cleaned mackerel. Coat the fish evenly with 2 tablespoons of potato starch and 2 tablespoons of all-purpose flour. This light coating will help create a crispy exterior when grilled and allow the glaze to adhere beautifully.
Step 2
Heat a frying pan over medium heat and add a generous amount of cooking oil. Place the flour-coated mackerel in the hot pan and grill until golden brown and crispy on both sides, approximately 5-7 minutes per side. Ensure the skin gets nicely crisp for the best texture.
Step 3
While the mackerel is grilling, let’s make the yuzu glaze. In a small bowl, combine 1 tablespoon of yuzu marmalade, 1 tablespoon of cooking wine, 2 tablespoons of oligosaccharide, 1 teaspoon of sesame oil, 3 tablespoons of soy sauce, 1 tablespoon of plum extract, and a pinch of ginger powder. Stir well until all ingredients are thoroughly mixed. This sauce offers a delightful sweet and tart flavor profile complemented by the savory soy sauce.
Step 4
Once the mackerel is nicely browned on both sides, move it to one side of the pan. Pour the prepared yuzu glaze into the pan. Once the sauce begins to bubble, flip the grilled mackerel to coat it evenly with the glaze. Reduce the heat to medium-low and continue to cook for another 1-2 minutes, allowing the glaze to absorb into the fish. Be careful not to overcook or burn the glaze.
Step 5
Your fragrant yuzu-glazed grilled mackerel is now ready! Arrange it beautifully on a plate while it’s warm. This dish is not only a wonderful side for rice but also makes a sophisticated appetizer. Enjoy this delicious and easy-to-make specialty at home!
