Hello everyone! Today, we’re going to make a delicious salad using wild chives, full of spring’s fragrance. Many of you probably love side dishes made with greens but find yourselves making them less often because your family isn’t very enthusiastic, right? Especially when the kids or your spouse aren’t big fans, it’s natural to gravitate away from preparing them. However, when I occasionally spot small packages of fresh greens, I can’t help but pick them up. This time, I was fortunate to get some fresh wild chives and decided to make a fragrant salad. Wild chives have a wonderfully unique aroma that’s truly captivating. They’re delicious wrapped in ssam (lettuce wraps), but I also really love them blanched and seasoned like this, as their fragrance remains vibrant and doesn’t dissipate. I made one package and ended up eating it all myself over two meals – I was so engrossed in the wonderful aroma that I didn’t even realize how much I’d eaten! This fragrant wild chive salad is a fantastic alternative to expensive spinach dishes for upcoming holidays, adding a delightful touch to your table. Shall we make it together right now?
Main Ingredients- 1 packet wild chives (approx. 200g, trimmed)
Seasoning Ingredients- 1/3 tsp salt (adjust to taste)
- 1/4 tsp minced garlic
- A pinch of finely chopped scallions (about 1cm length)
- 1 tsp sesame oil
- A sprinkle of toasted sesame seeds (for added nuttiness)

Cooking Instructions
Step 1
Prepare the wild chives by washing them thoroughly. Trim off any blemishes or tough parts. Rinse them gently under running water and pat dry. It’s best not to wash them too vigorously to preserve their natural aroma.
Step 2
Bring a pot of water to a rolling boil. Add a pinch of coarse salt (or regular salt) to the boiling water, then add the prepared wild chives. Immediately turn off the heat. Blanching them briefly like this is the secret to keeping them crisp and flavorful.
Step 3
Carefully remove the blanched wild chives from the hot water and rinse them immediately in cold water. Rinsing in cold water stops the cooking process and helps maintain their crisp texture. Gently squeeze out excess water; be careful not to squeeze too hard, as this can make the greens mushy. Cut the chives into bite-sized pieces, about 4-5 cm in length.
Step 4
Transfer the cut wild chives to a mixing bowl. Add all the seasoning ingredients: salt (or soy sauce), minced garlic, chopped scallions, sesame oil, and toasted sesame seeds. It’s a good idea to start with a smaller amount of salt (or soy sauce) and adjust the seasoning to your preference later.
Step 5
Gently toss the ingredients together with your hands until the seasoning is evenly distributed. Avoid mixing too vigorously, as this can bruise the chives. Ensure all the flavors are well combined.
Step 6
Transfer the fragrant wild chive salad to a serving plate. This delightful side dish, full of spring’s essence, pairs wonderfully with a warm bowl of rice.
