Main Ingredients- Wild Chives (Chamnamul) 300g (about 1 bunch)
Seasoning- Gochugaru (Korean chili flakes) 2 Tbsp
- Soy Sauce 2 Tbsp (adjust if using soup soy sauce)
- Anchovy Extract 1 Tbsp (for umami)
- Vinegar 2 Tbsp (for a tangy flavor)
- Cooking Syrup (or Corn Syrup) 1 Tbsp (for a subtle sweetness)
- Minced Garlic 1/2 tsp
- Sesame Oil 1 Tbsp (for nutty aroma)
- Toasted Sesame Seeds 1 Tbsp (for garnish)

Here’s our star ingredient today: a fresh bunch of wild chives (chamnamul), weighing approximately 300g.

Let’s prepare the chamnamul. Trim off any tough stem ends by snapping or cutting them with a knife. Remove any wilted or bruised leaves. We want only the fresh, tender leaves for the best texture and flavor. You can easily tear the leaves by hand.

Thoroughly wash the prepared chamnamul. Soak it in cold water for about 10 minutes, then rinse under running water 2-3 times. It’s crucial to drain the water well; excess moisture can dilute the seasoning. Place the chives in a colander to let the water drip off completely.

Now, let’s make the flavorful seasoning. In a mixing bowl, combine Gochugaru (2 Tbsp), Soy Sauce (2 Tbsp), Anchovy Extract (1 Tbsp), Vinegar (2 Tbsp), Cooking Syrup or Corn Syrup (1 Tbsp), Minced Garlic (1/2 tsp), Sesame Oil (1 Tbsp), and Toasted Sesame Seeds (1 Tbsp).
