This steamed tofu dish offers a unique flavor experience infused with the delicate aroma of perilla leaves. Step 1
Begin by preparing all the ingredients for your dish. Slice the tofu into approximately 1.5cm thick pieces. Wash the perilla leaves thoroughly, remove their stems, and cut them in half. Finely julienne the half onion. Meticulous ingredient preparation is the foundation for a delicious steamed dish!

Carefully slice the tofu into roughly 1.5cm thick pieces. For the perilla leaves, trim off the stems cleanly to ensure their fragrance is well-released, then cut them in half for easier arrangement. Julienne the onion finely to add its flavor.

Now, let’s make the flavorful seasoning sauce. In a bowl, combine 2 tablespoons of sugar, 2 tablespoons of gochugaru (Korean chili flakes), 3 tablespoons of soy sauce, 1 tablespoon of saeujeot (fermented shrimp), and 1 tablespoon of minced garlic. Mix them well until you have a smooth sauce. The saeujeot will add a deep, savory umami flavor.

Arrange the sliced tofu attractively in a wide pan. Then, layer 3 perilla leaves folded on top of each tofu piece, alternating them to fill the pan. It’s important to layer them carefully so the perilla’s aroma permeates the tofu evenly.

Once the tofu and perilla leaves are arranged, evenly distribute the julienned onion over the top. Pour the prepared seasoning sauce generously over everything. Finally, gently pour 1 cup of rice water along the sides of the pan. Now, cook over medium heat for about 5 minutes.

After simmering for approximately 5 minutes and the sauce has begun to reduce slightly, drizzle 1 tablespoon of perilla oil (or sesame oil) around the pan to add a final layer of aroma. The nutty fragrance of the perilla oil will enhance the dish’s depth. Let it simmer for another minute after adding the oil.
