Step 1
The first step to making a delicious amaranth salad is proper preparation. Amaranth can have some tough stems that are unpleasant to eat. Therefore, carefully select and separate the tender, young leaves and the softest parts of the stems. Discard any thick, fibrous stems to ensure a pleasant texture in your salad.
Step 2
Bring a pot of water to a boil. Blanch the prepared amaranth greens for no more than 1 minute. Amaranth cooks very quickly, and overcooking can make it mushy and diminish its nutrients. Immediately after blanching, rinse the greens thoroughly under cold running water to stop the cooking process and cool them down. Gently squeeze out as much excess water as possible with your hands; excess water will dilute the dressing. Place the drained amaranth in a mixing bowl. Add 1 tablespoon of soy sauce for soup and 0.5 teaspoon of minced garlic to season the greens.
Step 3
Now, add 1 tablespoon of fragrant sesame oil to the bowl. For an extra nutty aroma and flavor, add sesame seeds. It’s recommended to lightly crush the sesame seeds before adding them; this releases their oils and significantly enhances the overall taste of the dish. Gently toss and mix everything with your hands until all the ingredients are well combined and coated with the dressing. Your flavorful amaranth salad is now ready to be served and enjoyed!
