Bring a pot of water to a rolling boil and add 1 tablespoon of coarse salt. Carefully add the Chwinamul and blanch for a very short time, about 30 seconds only. Be careful not to over-blanch, as it can become too soft! Immediately remove the blanched Chwinamul and rinse it thoroughly under cold running water at least 3 times. Rinsing in cold water helps maintain its vibrant green color and crisp texture.

After rinsing, gently squeeze out as much water as possible from the Chwinamul using your hands. It’s important to remove excess water, otherwise, the seasoning may not adhere well. Once drained, roughly chop the Chwinamul into bite-sized pieces and place them in a mixing bowl.
