Bought Shine Muscat on half-price sale, but the sweetness wasn’t as high as expected? No worries! It transforms wonderfully into a fragrant and delicious homemade grape jam. Since it’s seedless, it’s incredibly simple to make. Try making this delightful fruit jam now!
Jam Ingredients- 1kg Shine Muscat grapes
- 400g granulated sugar (or adjust based on grape sweetness)
- 3 Tbsp fresh lemon juice

Step 1

Separate the Shine Muscat grapes from the stems, taking each berry individually. Place the grapes in a bowl and add 2 tablespoons of baking soda and 2 tablespoons of vinegar. Fill the bowl with enough water to cover the grapes and let them soak for 5 minutes. Afterward, gently rub the grapes with your hands under running water and rinse thoroughly at least 3 times.
Step 3
Place the washed Shine Muscat grapes in a colander to drain completely. Removing excess moisture is important for a better jam-cooking process.
Step 4
Peel the skin off the drained Shine Muscat grapes. The berries are quite large, so the skin comes off easily by hand. Prepare a total of 1kg of peeled Shine Muscat grapes.
Step 5
In a deep pot (using a non-stick pot prevents sticking and reduces splattering during boiling), add all the peeled Shine Muscat grapes. Wearing disposable gloves, gently mash the grapes with your hands. As the grapes are mashed, their juice will start to release.

Pour the 400g of granulated sugar evenly over the grapes. Gently mix with a spatula to ensure the sugar is well combined with the grapes. Then, start boiling over high heat, stirring occasionally to prevent sticking. If your Shine Muscat grapes are very sweet, you can reduce the amount of sugar.

Once the grapes begin to boil, reduce the heat to medium. Continue to cook, stirring occasionally. Skim off any foam that rises to the surface with a spoon. Removing the foam will result in a clearer and cleaner-tasting jam.

After simmering for about 20 minutes, add 3 tablespoons of fresh lemon juice. Lemon juice adds a refreshing tartness, brightens the color, and helps preserve the jam. Continue to simmer for another 20 minutes to achieve the desired consistency.

Turn off the heat when the jam’s color deepens and it seems slightly thinner than your desired final consistency. Remember that jam will thicken considerably as it cools, so avoid overcooking it.

Here’s a simple test to check if your jam is ready: Drop a spoonful of jam into a glass of cold water. If the jam holds its shape and doesn’t spread out, it’s perfectly set. If it spreads, continue simmering for a little longer.

Transfer the finished grape jam into sterilized glass jars. Once completely cooled, freezing is the best method for long-term storage. When you’re ready to use it, move a jar from the freezer to the refrigerator to thaw slowly.
