Mushroom rice is a dish I often make because of its wonderful aroma and chewy texture. Among the various types of mushrooms, rice cooked with shiitake mushrooms is the most beloved. Today, wanting a hearty meal with just one bowl without needing other side dishes, I’ve cooked it with savory minced beef for an even richer flavor. This shiitake mushroom rice, packed with nutrients, is perfect for a satisfying meal.

Shiitake Mushroom & Beef Rice Ingredients

  • 2 cups rice (washed and soaked for 30 minutes)
  • 6 fresh shiitake mushrooms (trimmed and sliced)
  • 120g ground beef
  • 1/6 carrot (thinly julienned)
  • A little sesame oil (for stir-frying)
  • A little salt (for marinating beef)
  • 1 Tbsp soy sauce (for marinating beef)
  • 1 Tbsp cooking wine (for marinating beef)

Seasoning Sauce Ingredients

  • 3 Tbsp soy sauce
  • 1 Tbsp plum extract (for sweetness and gloss)
  • 1 tsp minced garlic
  • 1 tsp red pepper flakes (for mild spiciness)
  • A little chopped green onion
  • A little toasted sesame seeds
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, rinse the rice lightly under running water and soak it for 30 minutes. After soaking, drain the rice thoroughly in a sieve. This ensures the rice is fluffy and not mushy.

Quickly wash the fresh shiitake mushrooms under running water and pat them dry. Trim off the tough stems and slice the mushroom caps thinly. Slicing them properly helps release their wonderful aroma.

Thinly julienne the carrot. This adds a lovely color and a pleasant texture to the rice.

Marinate the ground beef with 1 Tbsp soy sauce and 1 Tbsp cooking wine. Stir-fry the marinated beef in a dry pan (without oil) until it’s well-cooked and slightly crispy. This step prevents the rice from clumping and adds a delicious savory note.

To enhance the umami flavor of the rice, we’ll make a special broth. In a pot, combine 360ml of water with a piece of dried kelp (dashima) and 1-2 dried shiitake mushrooms. Bring it to a boil and simmer for about 5 minutes to create a flavorful kelp and shiitake broth. If you don’t have dried shiitake, you can use the stems from the fresh ones.

Now, it’s time to cook the rice. Place the soaked and drained rice into a pot or rice cooker. Pour the prepared kelp and shiitake broth over the rice.

Here’s the golden ratio for fluffy and sticky rice: the rice-to-water ratio is typically 1:1. For perfectly cooked rice, aim for the water level to be about 0.7 cm above the rice. Adjust slightly based on your rice type and soaking time.

Layer the stir-fried beef and julienned carrots evenly over the rice. The colorful ingredients already look appetizing!

Finally, arrange the sliced fresh shiitake mushrooms on top of the other ingredients. As they cook, the mushrooms will release their fragrant juices, infusing the entire pot of rice with their delightful flavor.

Place the pot over medium heat. Once the broth starts boiling, reduce the heat to low and let it simmer gently for about 12 minutes. If using an electric rice cooker, simply add all the ingredients and press the cook button as usual.

After simmering on low heat for 12 minutes, turn off the heat completely and let the rice steam, covered, for another 10 minutes. This steaming process allows the rice to cook evenly and become wonderfully moist.

While the rice is steaming, let’s prepare the delicious seasoning sauce. In a small bowl, combine 3 Tbsp soy sauce, 1 Tbsp plum extract, 1 tsp minced garlic, 1 tsp red pepper flakes, a little chopped green onion, a sprinkle of toasted sesame seeds, and 1 Tbsp sesame oil. Mix everything well.

After 10 minutes of steaming, carefully open the lid of the pot. A fragrant steam, rich with the unique aroma of shiitake mushrooms, will fill the air.
