From the local market, I always end up filling my basket with vibrant green vegetables because they look so incredibly fresh, it’s impossible to resist buying them! Today, I picked up cucumbers, perilla leaves, and lettuce. I’ve made a refreshing cucumber salad and this delicious seasoned perilla leaf side dish simultaneously. This perilla leaf dish is bursting with aromatic flavor and a savory seasoning that makes it a perfect accompaniment to rice.
Main Ingredients- 30 fresh perilla leaves
- 1/4 onion
- 1 green chili pepper
Seasoning Ingredients- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp salt
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp rice syrup or corn syrup (adjust sweetness)
- 1/2 Tbsp sugar (adjust sweetness with syrup)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp gochugaru (Korean chili flakes)
- 1/2 Tbsp salt
- 1 Tbsp minced garlic
- 1 Tbsp soy sauce
- 1 Tbsp rice syrup or corn syrup (adjust sweetness)

Cooking Instructions

It’s crucial to prepare the fresh perilla leaves thoroughly. For peace of mind, I like to soak them briefly in a vegetable wash before rinsing them under running water until completely clean. After washing, gently pat them dry or let them air dry until all excess moisture is gone. Trim off the tough stems before proceeding.
