Main Ingredients- 80g dried gondre namul
- 1 Tbsp minced garlic
- 6 Tbsp soy sauce
- 1.5 Tbsp sesame oil
- 1 Tbsp sesame seeds (toasted and crushed)
Boiling the Gondre- 600-700ml water
- 3 Tbsp soju (Korean rice wine)
- 600-700ml water
- 3 Tbsp soju (Korean rice wine)
Cooking Instructions
Step 1
First, place the 80g of dried gondre namul in a clean pot. Pour enough water to completely submerge the gondre. Since it’s dried, you can start boiling it right away without pre-soaking.
Step 2
At this stage, add 3 tablespoons of soju to eliminate any fishy smell and make the gondre more tender. Cover with a lid and boil on high heat for about 20 minutes.
Step 3
After boiling for 20 minutes, don’t turn off the heat immediately. Keep the lid on and let it steam for about an hour. This steaming process will make the gondre namul even more moist and tender.
Step 4
After an hour, drain the boiled gondre namul and rinse it under running water about 5-6 times. This step removes any residual bitterness or impurities.
Step 5
Gently squeeze out excess water from the rinsed gondre namul with your hands. Chop it into bite-sized pieces and place it in a bowl.
Step 6
Now it’s time to season. In the prepared gondre namul, add 1 tablespoon of minced garlic, 6 tablespoons of soy sauce, 1.5 tablespoons of sesame oil, and 1 tablespoon of toasted and crushed sesame seeds.
Step 7
Gently mix and massage the seasonings into the gondre namul with your hands, ensuring an even coating. Be careful not to mash the namul; a gentle touch is key.
Step 8
Finally, lightly chop the gondre namul with scissors into manageable pieces for easy eating. Cutting it too finely can diminish the texture, so aim for a good bite-size.
Step 9
And there you have it! A wonderfully tender Gondre Namul with a delightful savory aroma. Enjoy it as a side dish, or mix a generous portion with warm rice for a delicious meal!
